Black Bean Brownies!

These are delicious! I made them the first time today, and the boyfriend loves them!

Ingredients:
1 can black beans, rinsed
3 eggs
1/3 cup extra virgin olive oil
1 cup sugar
1/2 cup unsweetened cocoa
1 1/2 tsp baking powder
Touch of honey. (I used about maybe 2 tbsp)

I added the beans to a blender, then blended. Then add the eggs. Blend well again. Add oil and blend well. 
Then add all the other ingredients then blend well again.
I blend a lot because it makes the beans smoother in the mixture. The batter will be smooth at the end.

Place in oven at 350 degrees for a half hour. Pending on what dish you use, might be longer. I used a 8″ square pan, and it took about 45 mins. Let cool in pan than transfer to a cooling rack.  Enjoy!!

This is a great healthier brownie option, it has protein, less sugar, and no flour. Great for vegetarians who is okay with eggs. 

Lately, with baking, I substitute honey or unsweetened apple sauce. For example, This recipe originally called for 1 1/4 cups of sugar, but I only used 1 and added a touch of honey for some more sweetness. With banana bread I made last night, I substituted the sugar (1 cup) and mayo (1/2 cup) with unsweetened applesauce and a touch of honey and it came out great! For a little of a chocolate taste, instead of adding chocolate chips, I added some cocoa. 

There is nothing wrong with experimenting to make recipes healthier! 🙂
