I used this to make plenty of mini cheesecakes for my boyfriends social at school. It is also very simple to half the ingredients to make a smaller batch of cheesecakes. This recipe came out with about 32 mini cheesecakes.
30g of cream cheese, this took about 3 and 1/2 pkg of 12g each.
1 cup sugar
1 tsp vanilla
I mixed this in a blender. Make sure it is smooth. 🙂
For the crust I added melted butter to graham cracker crumbs (or any crumbs you choose). I had to mix many times. It was roughly about 4 cups of graham crackers and about 2 to 2 1/2 cups melted butter. You may need to experiment with this. It needs to be a bit sticky to be able to press down into the cups. Line cupcake pans with paper liners. I used regular sized cupcake molds but you may use mini ones for bit sized cheesecakes, just bake accordingly. Place a spoonful of cracker mix in the bottom, press down. Add a spoonful of cheesecake mix on top and smooth evenly.
Preheat oven to 350. Bake cheesecakes for about 20 mins until the middle is firm to the touch.
Let cool then place in fridge for a couple hours. Enjoy!
