Black Bean Brownies!

These are delicious! I made them the first time today, and the boyfriend loves them!

Ingredients:
1 can black beans, rinsed
3 eggs
1/3 cup extra virgin olive oil
1 cup sugar
1/2 cup unsweetened cocoa
1 1/2 tsp baking powder
Touch of honey. (I used about maybe 2 tbsp)

I added the beans to a blender, then blended. Then add the eggs. Blend well again. Add oil and blend well. 
Then add all the other ingredients then blend well again.
I blend a lot because it makes the beans smoother in the mixture. The batter will be smooth at the end.

Place in oven at 350 degrees for a half hour. Pending on what dish you use, might be longer. I used a 8″ square pan, and it took about 45 mins. Let cool in pan than transfer to a cooling rack.  Enjoy!!

This is a great healthier brownie option, it has protein, less sugar, and no flour. Great for vegetarians who is okay with eggs. 

Lately, with baking, I substitute honey or unsweetened apple sauce. For example, This recipe originally called for 1 1/4 cups of sugar, but I only used 1 and added a touch of honey for some more sweetness. With banana bread I made last night, I substituted the sugar (1 cup) and mayo (1/2 cup) with unsweetened applesauce and a touch of honey and it came out great! For a little of a chocolate taste, instead of adding chocolate chips, I added some cocoa. 

There is nothing wrong with experimenting to make recipes healthier! 🙂

Christmas in August.

It is way too early to think about Christmas. The only reason that I am going Christmas shopping today is because I might not be here with my family or my boyfriends family for Christmas due to a moving out of province.

The sad part….. I can already get Christmas decorations and wrapping papers and it is not even September!

I remember when I was younger that this stuff didn’t come out til after Halloween, but now, everything is commercialized. They bring it in earlier to make more money on a Holiday that probably puts everybody in the red. I am a student so I can’t afford to spend much on gifts, so we go 50-50 on them. Well, seeing how this Christmas we will be 3 months away from our 2 year anniversary.

What do you think? Is everything being to commercialized and over used just to get your money?

Back around St. Patrick’s day, I noticed St. Paddy’s cards. This year I noticed Halloween cards.

Another time of year I think robs you of money, which is probably getting closer to the Christmas holiday in terms of promoted and in revenue is Easter. I know myself that I love the marshmallow peeps that comes out every year and I stock up on them, but this is also being overly commercialized.

When does it stop?

Are we destined to have Christmas thrown at us in August to dread our credit card statements in January? What was once the happiest time of year is now becoming one people hates cause it is becoming so expensive.

And don’t get me started on the Christmas music….. Beginning of November? Way to early!

That time of year!

Yes. I am talking about going back to school. For me it is college. I will be taking 7 courses for Business Admin through a college by distance, then I will be taking an additional course by distance through a University for a total of 8 courses! Going to be one busy semester for sure!

I have been meaning to publish videos for a while now, I just don’t have the confidence right now to be able to. I am hoping that a start of a new school year will be the time where I could start doing that. Be able to do something in my spare time (the little that I will have) and do something that I would enjoy. I want to be able to post a range of topics for my viewers. Topics I would love to cover would be beauty, healthy lifestyle/recipes, fashion, DIY projects, make up tutorials, organization, and even tips on saving money or making a budget to even paying down debts. The last one I mentioned because my boyfriend just graduated with a Music Degree and I still have at least 2 years of school left for me. We ended up in a financial jam and we were able to catch it before it was too late, and now we are more aware of where our money is going and how to use it. So as I learn and grow I would want my viewers to see that and hopefully take away new information or new perspectives on different things.

Being in school is difficult. Not only do you want to do the best you can and study to get good grades, we are on a limited income. Everything would be from one student to another (no matter what your age), or even if you are not a student. There would be something for everyone!

Languages and Travelling

I am really interested in languages and to travel the world. I have been gathering tools to be able to study at home (a broke student who doesn’t have money to take private lessons or classes *sad face*) to study various languages. The top two on my list are Japanese and Russian. I have been into the Japanese language and culture about 10 plus years now. I know Hiragana and some Katakana and Kanji, but I have a long way to go. I am planning to use learning Japanese and possibly Russian while I am in school, as a stress reliever. I once took a mini 3-day course in Russian while I was in Junior High and had an interest ever since. On the list of languages I would like to learn is French, German, Italian, Spanish, Swedish and possibly Romanian and Czech. Will I learn all these? Probably not, but only time will tell.

For places I would like to visit? I have a list!

Things don’t always go as planned!

I had so many ideas for this blog. I started it when I got injured and had a game plan for what I would post, even made a video to post here (but later got deleted). There is just so much that interests me. I want to be able to start posting on YouTube videos about makeup, fashion, weight loss (struggling now with a 40 pound weight gain, I now weigh 215 pounds, which I haven’t weighed that much since I was about 16), organizing etc. It would be so nice to have a regular audience who could give me feedback and ideas for posts/videos. I want to be able to give my audience what they want (within reason).
